Increasing Ginger Juice Extraction with PEF Technology

Ginger juice is increasingly in demand for its use in beverages, food products, and wellness supplements. However, traditional ginger juice extraction methods can leave significant amounts of juice in the leftover pomace, leading to inefficiencies and waste. The application of Pulsed Electric Field (PEF) technology is changing this, offering a breakthrough in extraction efficiency and sustainability.

What is PEF-Assisted Ginger Juice Extraction?

Technologie PEF enhances ginger juice extraction by using short bursts of high-voltage pulses to disrupt the cellular structure of the ginger. This allows for easier juice release, leading to a significant increase in yield.

Key Benefits of PEF in Ginger Juice Extraction

Increased Juice Yield

With PEF treatment, ginger juice yields can increase by as much as 33%, especially in less efficient extraction systems.

Reduced Pomace Moisture

The moisture content in the waste fibers (pomace) is reduced by over 20%, improving overall extraction efficiency.

Higher Quality Juice

PEF treatment results in a higher Brix level, indicating a richer and more concentrated juice. For example, in a lab trial, PEF-treated ginger juice showed a Brix level of 3.6, compared to 3.3 in the control.

Methodology: How PEF Enhances Extraction

The ginger juice extraction process typically involves cutting ginger stems into pieces between 10-25 mm in size and subjecting them to hydraulic juice pressing at pressures ranging from 200 to 400 PSI. With the introduction of PEF treatment before pressing, the juice yield substantially improves.

  • PEF Application: Ginger is treated with electric pulses at 5 kJ/kg. This helps break down the cell walls, making the juice easier to extract.

  • Pressing: The pressing process is repeated up to four times, with significant increases in yield after each press due to the enhanced cell permeability from PEF treatment.

For example, after the 3rd press, ginger treated with PEF resulted in 14% to 33% more juice than untreated ginger. By the 4th press, this increase persisted, showing the long-lasting effects of PEF on juice extraction.

Results of PEF-Assisted Extraction

In trials, PEF treatment significantly boosted juice extraction:

  • After the first press, ginger treated with PEF saw a 183% increase in yield.
  • After the second press, this increase remained at 58%.
  • By the third press, the increase was still at 30%, and after the fourth press, there was a 10% increase in yield compared to control.

This consistent improvement in juice yield translates into better resource utilization and less waste, making PEF a highly attractive option for ginger juice producers.

Furthermore, PEF shows improvement in extraction in a wide range of fruit and vegetable juices such as pineapple et passion fruit.

Less Waste, More Efficiency

One of the key environmental benefits of PEF-assisted extraction is the reduction in waste. In the trials, PEF treatment resulted in a significant reduction in the moisture content of the pomace—from 71% in the control group to 57% in the PEF-treated ginger. This not only reduces waste volume but also makes the pomace easier to handle.

Why PEF Technology is the Future for Ginger Juice Extraction

PEF-assisted extraction has the potential to be a game-changing technology for the ginger juice industry. By improving juice yield, reducing waste, and enhancing the quality of the final product, PEF offers a sustainable and efficient alternative to traditional extraction methods. For manufacturers looking to increase profitability and sustainability, PEF treatment is a highly effective solution.

Conclusion

With its ability to boost yield by up to 33% and reduce pomace moisture content, PEF technology is setting a new standard for ginger juice extraction. This innovative approach enhances productivity and supports sustainability goals by reducing waste and energy consumption.

By adopting PEF-assisted extraction, ginger juice producers can optimize their processes, improve product quality, and reduce their environmental impact.
