What are the latest technologies that have been applied to the olive oil production process?

Marisa Cano: Last year, we integrated the patented Opticept technology into our mill, marking a significant advancement. This cutting-edge technology utilizes pulsed electric fields to open the biological cells of the olive paste between the crusher and malaxation stages.

 

The results have been outstanding, particularly in enhancing both quality and yield, even during a challenging harvest season.


Since the establishment of our Baena mill in 2015, Aceites Canoliva has consistently embraced the latest technologies throughout the olive oil production process. Every year, we have expanded our machinery and increased capacity to meet the growing demands of our farmers and, most importantly, to elevate the quality of the extra virgin olive oils (EVOO) we produce.

Why did you choose to integrate the OptiCept technology in your process?

Miguel Higueras: After carefully evaluating various options and proposals on the market, we were immediately convinced by the potential of Opticept’s pulsed electric fields technology. One of the key factors in our decision was the opportunity to trial the machine on-site, thanks to a rental agreement offered by the company. This allowed us to experience firsthand the benefits it brings. Furthermore, during our assessment, we recognized that the technology significantly improve the preparation of the olive paste, leading to higher extraction yields and, ultimately, superior olive oil quality.

What results have you achieved in these months of implementation at your mill?

Miguel Higueras: The results have been outstanding, particularly in improving extractability in challenging olive varieties like Arbosana, Arbequina, and Manzanilla Cacereña, which have short maturation periods.

 

The performance and benefits of this technology have clearly demonstrated that our investment was a wise one, delivering substantial economic returns.

Next year is expected to bring a good harvest, and the mill needs to be ready to obtain the highest possible volume with the best quality. What advantages will you gain with the Opticept equipment?

At Aceites Canoliva, our mill is nearly prepared for the upcoming season, which is shaping up to be a promising one. With the integration of this advanced technology, we plan to reduce malaxation times during production, particularly for the aforementioned olive varieties. This adjustment will allow us to further enhance the quality of our olive oils, aligning perfectly with our primary objective.

The OptiCEPT® LO7 system enables increased EVOO extraction, improved efficiency, maximum performance, and superior olive oil quality.

 

The olive crusher “breaks” the cell membrane to release the oil. However, a significant amount of oil is still left inside the cell. PEF ensures that the most possible oil is released from each cell.

 

The integration of the OptiCEPT® PEF system is made in the initial stage of the process, right after the crusher, enabling more of the valuable oil locked inside the olives cells to be accessible for processing.

 

The olive paste is treated with pulsed electric field within milli to microseconds making the process very efficient without applying any heat.

 

The effectiveness of PEF treatment is determined by the combination of pulse parameters, including electric field strength, pulse duration, and frequency.
